The experience
Pajares Salinas is one of Bogotá's long-standing Spanish restaurants, founded in 1953 by chef Saturnino Pajares. In the 1980s the family moved the restaurant to the north of the city, where it has stayed on Carrera 10 in Chicó Norte. After Saturnino's death in 2021, his children Zuleima and José Augusto run it. The kitchen follows traditional Spanish cooking, and the cellar holds an extensive wine list. The room suits family lunches, business meetings and special occasions, with service Monday to Saturday for lunch and dinner.
