The experience
Afluente is the restaurant of chef Jeferson García, who cooked at Boragó in Santiago and in kitchens in Thailand and Denmark before opening in Bogotá in 2024. Its tasting menu, Conectividad, is a research-driven journey through high-altitude páramo ecosystems, using nearby ingredients such as the camarona grape and the ají de páramo once used by the Muisca people. The room is intimate and understated, with rough plaster walls, wooden furniture and pendant lights, and conversation comes easily. Chef García founded the restaurant in 2024 in Chapinero.
